• 2 tbsp fresh parsley, chopped

• 1 tbsp Dijon mustard

• 1 tbsp olive oil

• 1 tbsp butter, melted

• 1 tsp salt

• ½ tsp black pepper

• 1 tsp lemon zest

• ½ cup chicken or beef broth

• ½ cup dry white wine (optional)

Instructions:

1. Prepare the Lamb

Remove the lamb from the refrigerator at least 30 minutes before cooking to bring it to room temperature. This helps it cook evenly.

2. Make the Herb Rub

In a small bowl, mix together garlic, rosemary, thyme, parsley, Dijon mustard, olive oil, butter, salt, pepper, and lemon zest. This fragrant mixture will create a flavorful crust on the lamb.
