Buttery Scones with Lemon Glaze

Ingredients

For the scones:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ⅓ cup granulated sugar
  • ½ cup (1 stick) cold unsalted butter, cubed
  • ¾ cup heavy cream (plus extra for brushing tops)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest (zest of about 1 lemon)

Optional Add-ins:

  • ½ cup blueberries or raspberries
  • ⅓ cup white chocolate chips

For the lemon glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp fresh lemon juice
  • ½ tsp lemon zest

Instructions

Step 1: Preheat & Prepare

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.

Step 2: Make the Dough

  1. Whisk together flour, baking powder, salt, sugar, and lemon zest.
  2. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Whisk the cream, egg, and vanilla extract in a separate bowl.
  4. Pour the wet mixture into the dry ingredients and mix gently until combined (do not overmix). Fold in optional add-ins.
  5. Turn the dough out onto a floured surface. Gently press into an 8-inch round disk about 1 inch thick.

Step 3: Shape & Bake

  1. Cut the dough into 8 wedges (like a pizza) and place on the prepared baking sheet.
  2. Brush tops with a little extra cream for a golden crust.
  3. Bake for 15–18 minutes, or until lightly golden.

Step 4: Make the Glaze

  • Whisk powdered sugar, lemon juice, and zest until smooth. Adjust thickness by adding more juice or sugar.

Step 5: Glaze the Scones

  • Let scones cool for 5–10 minutes, then drizzle with lemon glaze.

Tips & Variations

  • For flakier scones: Freeze the butter cubes before mixing.
  • Want mini scones? Divide the dough into two smaller rounds and cut each into 6–8 mini wedges.
  • Make ahead: Freeze unbaked scones, then bake from frozen (add 2–3 minutes to bake time).
