Homemade Vanilla Almond Granola – Perfect for Yogurt Parfaits

Homemade Vanilla Almond Granola Crispy, golden granola with oats, nuts, and a hint of vanilla — perfect for yogurt parfaits, snacks, or topping smoothies.


Ingredients (Makes about 4 cups)

  • 3 cups old-fashioned rolled oats
  • ⅓ cup (67 g) brown sugar firmly packed (may substitute an equal amount of coconut sugar)
  • ¾ cup sliced or chopped almonds
  • ½ cup unsweetened shredded coconut (optional)
  • ¼ tsp salt
  • ¼ cup melted coconut oil (or neutral oil like avocado or light olive)
  • ⅓ cup maple syrup or honey
  • 2 tsp vanilla extract

Optional add-ins (after baking):

  • ½ cup dried cranberries, raisins, or chopped dried strawberries
  • ¼ cup mini chocolate chips or cacao nibs

Instructions

Step 1: Preheat the oven

  • Set oven to 325°F (163°C).
  • Line a baking sheet with parchment paper.

Step 2: Mix dry ingredients

  • Combine oats, almonds, coconut (if using), and salt.

Step 3: Add wet ingredients

  • Whisk together melted coconut oil, maple syrup (or honey), Brown Sugar, and vanilla.
  • Pour over the oat mixture and stir until well coated.

Step 4: Bake

  • Spread the granola mixture evenly on the baking sheet.
  • Bake for 22–26 minutes, stirring halfway through, until golden and crisp.
  • Let cool completely — it will continue to crisp up as it cools.

Step 5: Add extras

  • Stir in dried fruit or chocolate chips once cool, if desired.

Tips & Variations

  • For clusters: Press the granola gently before baking and avoid stirring mid-way.
  • Nut-free: Swap almonds for sunflower or pumpkin seeds.
  • More crunch: Add chia or flaxseeds before baking.
