Mini Quiche Lorraine Recipe

Classic French-inspired Mini-Quiche brunch bites made easy in a muffin tin! Buttery crust, smoky bacon, caramelized onion, and creamy egg custard in every bite.


Mini-Quiche

Ingredients

For the crust (optional – you can use pre-made pie dough):

  • 1 ¼ cups all-purpose flour
  • ½ cup (1 stick) cold unsalted butter, cut into small cubes
  • ¼ tsp salt
  • 3–4 tbsp ice-cold water

For the filling:

  • 6 slices of bacon, cooked and crumbled
  • ½ small onion, finely diced or caramelized
  • 4 large eggs
  • ¾ cup half-and-half or heavy cream
  • ½ cup shredded Swiss or Gruyère cheese
  • Salt & black pepper to taste
  • Pinch of ground nutmeg (optional)

Instructions

Step 1: Make the crust (skip if using store-bought dough)

  1. In a food processor or mixing bowl, combine flour and salt.
  2. Add cold butter cubes and pulse (or cut in with a pastry cutter) until mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time. Mixing until the dough just comes together.
  4. Shape into a disc, wrap in plastic, and chill for at least 30 minutes.

Step 2: Preheat & Prep

  • Preheat oven to 375°F (190°C).
  • Lightly grease a 12-cup muffin tin or use silicone liners.

Step 3: Roll Out Dough

  1. Roll chilled dough on a floured surface to about ⅛” thick.
  2. Cut out 3-inch circles and gently press into each muffin cup, shaping the edges up the sides.

Step 4: Make the Filling

  1. In a small skillet, sauté onions until soft (or caramelize them for extra flavor).
  2. Whisk eggs, cream, salt, pepper, and nutmeg.
  3. Add bacon, onion, and shredded cheese.

Step 5: Assemble & Bake

  1. Spoon filling evenly into prepared crusts – fill about ¾ full.
  2. Bake for 20–25 minutes until the centers are set and tops are golden.
  3. Let cool for 5 minutes before removing from the tin.

Tips & Variations

  • Make ahead: You can bake these a day in advance and reheat at 300°F for 10 minutes.
  • Mini crustless quiche: Skip the crust for a lower-carb version and pour filling into greased muffin cups.
  • Cheese swap: Try cheddar, mozzarella, or a blend if Swiss isn’t your favorite.
